Octopus - Boiling
First, prepare a pot of boiling water for the octopus.
When the octopus is placed in the water it will go off the boil.
Bring it back to the boil then turn off the heat.
Leave the octopus in the water for 5 minutes.
Hang the octopus on an S-hook to cool. Boiling the octopus this way prevents the meat from tightening up too much, so it tastes better.
