Decorative Vegetables - Daikon Radish Shreds


1.First, peel a 10 cm long piece of daikon radish. 2.Cut a smooth, thin, continuous sheet (use the Katsuramuki technique). 3.Cut the sheet into 10 cm lengths and stack.
4.Cut the stack into shreds as finely as possible. 5. Place in water. 6.Using chopsticks, pick up an appropriate amount of radish and lightly squeeze out the moisture with your left hand.
7.Lay the clump of shreds on a board and cut off 2 cm of the base, where the shreds bend.
