Decorative Vegetables - Turnip Scrolls

Cut off the leafy top of the turnip.

Place the cut surface on the board and slice through the turnip horizontally, about 3 cm above the board.

Cut off the outer skin reasonably thickly.
4.
Cut a thickish, continuous sheet from the turnip (use the
Katsuramuki
Technique).
5.
Leave under running water for about 10 minutes, then soak in salted water of the same concentration as seawater to make it more pliable.
6.
Wash briefly and soak in sweet vinegar (
amazu
).
7.
Spread out the turnip sheet on a cloth and roll it up, starting from the end closest to you.
8.
Use boiled trefoil stems to tie it up.
9.
It should resemble a rolled up scroll.
