Red Tilefish
- Three Piece Filleting (Sanmai-oroshi)

1.Lay the fish with the head end to the right and cut along the ventral side. 2.Cut up to the thick spine, then cut through the ribs at the point where they meet the spine. 3.Continue cutting right through to the back of the fish.
4.Next, cut along the dorsal side of the fish. 5.As before, cut through the ribs at the point where they meet the spine, then continue cutting through to the ventral side. 6.The resulting three fillets
