Red Tilefish - Removing Ribs
1.
Turn the sharp edge of the blade upward and separate the top of the ribs from the flesh.
2.
Cut along the ribs, moving the knife in a sawing motion.
3.
Separate the top of the ribs from the other fillet in the same way.
4.
Cut away the ribs as before. Try to cut the ribs off in as thin a piece as possible.
