Sea Bream - Cutting Up the Head

40.Place the severed sea bream head on a chopping board as shown. 41.Holding the head firmly in your left hand, insert the tip of a kitchen knife into the mouth and push it in, right down to the chopping board. 42.With the tip of the blade on the board, pull the knife down flat toward the board, cutting through the top of the head.
43.To cut right through, place your left hand on the back of the blade and give it a sharp push. 44.The head has been cut open. 45.Cut through the lower jaw.
46.Separate the front and back sections of the head at the gill cover. 47.Insert the knife between the eye and mouth and cut through the top of the head. 48.Next, turn the half-head over and cut off the eye section at a right angle to the previous cut. Use the heel of the blade for this.
49.It should look like this after being cut. 50.Cut off the gill cover area with no meat on it. 51.The head should now look like this.
