Yellowtail - Removing Bones


1.First, remove the ribs. Turn the blade upward and separate the ribs from the flesh slightly, moving the knife from the tail toward the head. 2.Turn the blade downward and cut off the ribs, leaving as little flesh on the bones as possible. 3.It is easier to do this if you move the knife in an arc.
4.Cut the end of the ribs free from the flesh. 5.Next, remove the lateral bones. First, lay the fillet with the head end toward you. 6.Place the knife just to the right of the line of bones in the blood-coloured flesh.
7.Cut along here with long strokes. This halves the fillet. 8.Place the knife on the left side of the bones. 9.Cut off the bones in the blood-coloured flesh with long strokes.
10.The bones have been removed.
