 Yellowtail - Cutting the Head in Two

The head contains a lot of flavour, so be sure to use it rather than just throw it away.


1.Grasp the lower jaw area of the fish head firmly with your left hand, stabilize the head on the board and place the tip of the knife in the mouth. 2.Push down hard on the knife handle. 3.Cut down to the board and open up the head.
4.Sever the base of the gills from the head. 5.The gills have been separated from the head. 6. Place the knife on the lower jaw.
7.Cut the head in half.
