Yellowtail - Cutting Up the Head into Small Pieces

Cut one half-head into front and back sections at the base of the gill cover.

Repeat for the other half-head.
3.
Insert the knife between the eye and the mouth.
4.
Push down firmly on the knife handle. A sharp push with the left hand on the back of the blade makes cutting easier.

Next, turn the piece over and cut off the eye section at a right angle to the previous cut.

Cut the eye section into widths of about 3 cm.
7.
Do not cut them too small or they will break up easily when boiled.
8.
Cut up the mouth section.
9.
Cut the back section of the head in half. Place the knife about 3 cm from the pelvic fin.
10.
Cut through.

These are the two resulting pieces.
