| 1.Sprinkle salt over the cucumber. |
2.Roll the cucumber back and forth on the chopping board.
This process is called "itazuri". |
3.Blanch the cucumber by dipping it briefly in a pot of
boiling water. |

| 4. Refresh in cold water immediately. |
5.Make close cuts diagonally across the cucumber, cutting
to a depth of 2/3 the diameter of the cucumber. |
6.Turn the cucumber over and repeat this process on the
other side. |

| 7.It should look like a snake, as in the photograph. |
8.When pulled out straight the cucumber should be more
than twice as long as it was before cutting. |
9.Add some kombu kelp to salted water. The water
should be about the same concentration as seawater (this is called
"tatejio"). Place the cucumber in this and allow
to soak for about 10 minutes. |
